For whatever set of reasons - the English colonists in the 17th century were COOKED vegetable picklers.

By the 18th century there is good documentation of fermented pickles in the Colonies.

Now - if that is because fermented pickling was a vernacular technique that wasn't written down - or if the English had stopped doing fermented pickling by the 17th century - I am not clear.

For if they were only cooked vegetable picklers, they could very easily have picked up fermented pickles from all the German speaking immigrants in Pennsylvania.
